I have come up with three quick snacks that are filling and just right for summer. My rice cake snack begins with three tablespoons of part skim ricotta cheese mixed with a teaspoon of low sugar preserves. The preserves adds some sweetness to the ricotta cheese. I prefer apricot jam but use any flavor that you like. Spread 2 tablespoons of the ricotta on a whole grain rice cake. Add several slices of fresh fruit on top. You can use thinly sliced apples, nectarines or peaches. Then spread the extra ricotta on top of the fruit and top that with 1/4 cup of ripe blueberries or sliced strawberries. Eat immediately. I like to make a snack from whole wheat pita bread. First, I cut a large pita in half. I could use a small pita but I find them difficult to stuff and keep intact. Spread a tablespoon of peanut butter inside the pita. Then fill the pita with prepared salad. I use whatever lettuce and vegetables that I have on hand that day. Add a slice of avocado and tuck it into the salad. Then add a couple of mandarin orange slices to complete the snack. You can eat it right away or wrap it up and take it along for later. This last snack is something I like to make when strawberries are ripe and at their sweetest. It is very simple but just delicious. It is a lower calorie version of a dessert that I had, many years ago, at Bed and Breakfast in New Hampshire. I use plain Greek yogurt and add a drop of vanilla to it but you can use vanilla yogurt. I like the thick Greek yogurt because it adheres well to the strawberries. Clean the strawberries but leave the stem on. Dip each strawberry, one at a time, in the yogurt. Then roll the yogurt covered strawberry in Splenda Brown Sugar Blend or regular brown sugar, if you prefer. Eat immediately. Do not save for later. I have tried to combine several different flavors and textures into these snacks in order to make them interesting and satisfying.
